A Delicious and Filling Breakfast Burrito, Only 9 Points on Weight Watchers Points Plus

Now I am a rather large specimen of human being or as Peter Griffin would say, a fatty, and there are many different things I have tried in the past to lose my ever gaining poundage. Last winter I actually lost 38 Lbs during a 2 month long work competition using calorie counting and exercise. It was a crash diet and after it was over I could not control myself. Sadly, there I went again on my own, eating every high calorie food I'd ever known. Seriously, I gained all but 7 pounds back in seven months. Put my sad pants on for that one. So my wife and I decided to go on the weight watchers points plus plan. It’s been a month and I am ten pounds lighter thanks mainly to my filling breakfast burrito and other such low point’s breakfasts and dinners.
This is a breakfast burrito that is of my own design, made from necessity. Let’s just say it is a hard transition to go from a large amount of calories in a sitting to just a few in a day. This burrito is one of my staples because it actually gets me full, and I mean actually full, plus it is only 9 points with weight watchers points plus, plus it is so easy to make that a person with little knowledge of how to make meals other than using the microwave (that’s me) can do it, Plus! Plus! Plus!! it actually tastes good, very good. The following will make 2 servings which will calculate out as 9 points per serving.
The Ingredients
3.5 peeled potatoes points plus points=6
2 carb balance tortillas=4
½ cup reduced fat sharp cheddar =4
6 Tbsp egg whites =1
4 Tbsp fat free sour cream =1
2 strips of bacon (can be beef or pork or turkey) =2
(optional) 1 ½ - 2 jalapeños =0
Directions
-Take the peeled potatoes and cube them, hopefully to
somewhat equal portions (I’m terrible at this as my wife will attest) so they
will cook evenly.
-Spray down a large baking pan and place the cubed potatoes on the pan, now put them in the oven at 350° for approximately 10-15 min. You basically are going to cook them till brown on the outside and soft on the inside. My wife likes them a little over cooked so their crunchy but that is up to you.
-While the potatoes are cooking, put
the bacon on the small baking pan and put them in the oven as well. Cook the
bacon until it is crispy and easy to crumble.
-When the potatoes and bacon starting to cook this is a good opportunity to slice up the jalapeño in to small pieces (still optional).
-When the potatoes are close to
finished, start the egg whites cooking on a skillet or pan. Cook until done (salmonella
BAD!!!)
-When the potatoes, bacon, and eggs
are completely done get a larger bowl you can use for mixing. Dump in the eggs
and the potatoes. Take the bacon strips and crumble or break them up in the
bowl so that there are lots of small bacon bits to go around.
-Next add the cheese, (my wife likes
to melt the cheese on the potatoes or melt it onto the eggs prior to putting
it in the mixing bowl, but it is entirely up to you).
-Now add the sour cream, and mix your
heart out (I use a large spoon). The sour cream is the glue that holds it all
together.
-If there is a spicy eater and a non
spicy eater in the house, such as my situation, add the jalapeños in after the
non spicy eater has been served.
-Get out the tortillas and serve away.
The Jalapeno Addition
Now there has to be something said about the spicy.
I absolutely love adding jalapeño to this delicious dish. The jalapeño gives
the meal such a great flavor and it seems to fill me up faster the spicier
it is. Now I have not found any actual data to back up spicy food = more
filling so it might not be true but man does it work for me.

Maybe you can even tell me about some alterations I might want to try. My only goal here is to have honestly good and healthy food, it definitely saves a person from running to alternatives that will only cause more weight gain and less excellence in their tennis game, (I like playing tennis).

Hey dude. Good luck losing weight. I don't know if you like making omelets, but using egg whites and spinach, little bit of low fat cottage cheese, little bit of feta, and you can make something really filling that will satisfy. Also, if you are a pasta man, and who isn't, check out the 'Carb lover's Diet'. Very filling, not fattening. Good luck!
